Ingredients
Scale
Noodles
- 500 g / 1 lb fresh egg noodles
Toppings
- 3/4 cup green onions, finely sliced (scallions)
- 1 tbsp sesame seeds (plus more for garnish)
- 2 – 3 tbsp crushed peanuts (optional, plus more for garnish)
Sauce
- 1 ½ tbsp dark soy sauce
- 1 tbsp normal soy sauce
- 1 ½ tbsp rice vinegar
- 2 tbsp sesame oil
- 2 tsp fresh grated ginger
- 1 garlic clove, minced
- 2 tsp white sugar
- 2 tbsp peanut butter
- 1 tbsp Chinese sesame paste or tahini
- 2 tsp garlic chili paste, like Sambal Oelak or Sriracha (adjust to taste)
Instructions
- Cook the noodles: Prepare the fresh egg noodles according to the packet directions. Once cooked, drain them well and briefly rinse under cold tap water to stop them from sticking together, then drain again thoroughly.
- Prepare the sauce: In a bowl, combine the dark soy sauce, normal soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, white sugar, peanut butter, Chinese sesame paste or tahini, and garlic chili paste. Mix until smooth. If needed, microwave briefly to help the ingredients blend together smoothly.
- Toss and serve: Place the cooked noodles in a large bowl. Add the sliced green onions, sauce, sesame seeds, and crushed peanuts if using. Toss everything well to coat the noodles evenly. Garnish with additional sesame seeds and crushed peanuts if desired. Serve the noodles warm or at room temperature.
Notes
- For best texture, use fresh egg noodles, but dried noodles can be substituted if necessary.
- Adjust the amount of garlic chili paste based on your preferred level of heat.
- Microwaving the sauce briefly helps melt the peanut butter and sesame paste, creating a creamier texture.
- This dish can be served as a side or a light main course.
- Optional crushed peanuts add a nice crunch and nutty flavor.
