Ingredients
Scale
Main Ingredients
- 2 packets ramen or other instant noodles (discard seasoning)
- 1 tsp oil
- 2 tsp sesame oil (or more oil)
- 2 garlic cloves, minced
- 1/2 onion, sliced
- 200g / 7oz beef mince (ground beef)
- 1 1/4 cups (315 ml) water, plus more as needed
- Big handful bean sprouts
Sauce Ingredients
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce (or hoisin sauce)
- 2 tsp hoisin sauce (or more oyster sauce)
- 1 tbsp mirin
Garnish
- Finely sliced green onion / shallots
- Sesame seeds
Instructions
- Mix Sauce: Combine the dark soy sauce, oyster sauce, hoisin sauce, and mirin in a small bowl and set aside for later use in the recipe.
- Sauté Onion and Garlic: Heat both the regular oil and sesame oil in a medium skillet over high heat. Add the sliced onion and minced garlic, cooking for about 1 and a half minutes until they start to turn golden and fragrant.
- Cook Beef: Add the ground beef to the skillet and cook, breaking it up with a spatula as it browns. Continue until the beef loses its pink color and begins to turn light brown.
- Caramelize Beef: Pour the prepared sauce over the beef and continue cooking for 2 to 3 minutes, allowing the flavors to meld and the sauce to caramelize nicely around the meat.
- Add Water and Noodles: Push the beef mixture to the side of the skillet to create space. Pour in the measured water, then gently add the ramen noodles into the water to start cooking.
- Cook Ramen: Let the noodles sit for 45 seconds, then turn them gently. After 30 seconds, untangle the noodles carefully and toss them through the beef and sauce mixture for even coating.
- Add Bean Sprouts: Stir in a big handful of bean sprouts and continue tossing for about a minute or until the sauce reduces and thickens to coat the noodles, and the noodles are fully cooked.
- Serve: Dish out immediately, garnishing with the finely sliced green onions and a sprinkle of sesame seeds for added aroma and texture.
Notes
- Note 1: Discard the seasoning packets from the ramen noodles to control the flavor and sodium content.
- Note 2: Sesame oil provides a distinctive nutty aroma; adjust quantity according to taste.
- Note 3: Ground beef can be substituted with ground pork or chicken if preferred.
- Note 4: Dark soy sauce adds color and deep umami flavor; regular soy sauce can be used but with lighter coloring.
- Note 5: Oyster sauce adds a rich savory flavor; hoisin sauce can be used as an alternative for a sweeter taste.
- Note 6: Mirin is a sweet rice wine; if unavailable, a small amount of sugar mixed with rice vinegar can be substituted.
- Note 7: Adjust the cooking time with bean sprouts to keep them crisp and fresh.
