For the French Toast
- 6 slices brioche or white sandwich bread, slightly stale
- 30 – 40g (2 – 3 tbsp) butter
- 2 large eggs (~60g / 2 oz each)
- ½ cup (125 ml) milk
- ½ tsp cinnamon powder
- 1 tsp vanilla extract
For the Macerated Strawberries (optional)
- 250g (8 oz) strawberries, halved
- 1 tbsp white sugar

Instructions
- Prepare the egg mixture: In a bowl, whisk together the eggs, milk, cinnamon powder, and vanilla extract vigorously. This helps blend the cinnamon throughout the mixture and prevents it from floating on top.
- Melt butter in skillet: Heat 15g (1 tbsp) of butter in a non-stick skillet over medium heat until melted and slightly bubbling.
- Dip and cook bread slices: Quickly dunk one slice of bread into the egg mixture, coating both sides evenly. Place the soaked bread into the skillet. Repeat with 1-2 more slices to fill the pan, making sure not to overcrowd it.
- Cook the French toast: Cook each slice for 2½ to 3 minutes per side, or until both sides are golden brown and cooked through. Transfer cooked slices to serving plates.
- Cook remaining bread: Add more butter to the skillet as needed, and cook the remaining bread slices using the same method.
- Macerate the strawberries (optional): Toss the halved strawberries with the white sugar in a bowl. Allow them to sit for at least 20 minutes. The strawberries will soften and release their juices, creating a sweet syrup that complements the French toast.
- Serve: Serve the French toast warm, topped with butter, plenty of maple syrup, and the macerated strawberries if using.
Notes
- Use slightly stale bread for better absorption of the egg mixture without falling apart.
- Do not soak the bread too long to prevent sogginess—just a quick dunk is sufficient.
- You can substitute brioche with challah or thick white bread if preferred.
- Macerated strawberries add a fresh, sweet contrast but can be omitted or replaced with other fresh fruits.
- Adjust cinnamon and vanilla quantities to your taste preference.
