Ingredients
Scale
Dressing
- 1 1/2 tbsp soy sauce, light or ordinary
- 2 1/2 tbsp peanut oil
- 3 tbsp rice vinegar
- 1 tbsp mirin
- 2 tsp brown sugar
- 2 tsp minced ginger
- 1 clove garlic, minced
Beef
- 200g (7 oz) rump or sirloin beef steak, excess fat trimmed
- 1 tsp vegetable oil
Noodles and Vegetables
- 6 oz (180g) soba noodles
- 6 oz (200g) green beans, trimmed
Garnish
- 1 scallion/shallot, finely sliced
- 1 tbsp crispy Asian shallots
Instructions
- Prepare the Steak: Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature, which ensures even cooking. If it is a very hot day, 15 minutes is sufficient.
- Make the Dressing: In a jar, combine the soy sauce, peanut oil, rice vinegar, mirin, brown sugar, minced ginger, and minced garlic. Shake well to blend all the flavors together.
- Cook the Steak: Heat 1 tsp vegetable oil in a skillet over high heat until it starts to smoke. Add the steak and cook it to your preferred doneness. For medium rare, cook for about 2 minutes on the first side and 1 minute 45 seconds on the second side. This method locks in juices and keeps the meat tender.
- Rest and Slice Steak: Transfer the cooked steak to a plate and cover loosely with foil. Let it rest for 5 minutes to allow juices to redistribute. Then slice the steak into thin strips against the grain to maximize tenderness.
- Cook Noodles and Beans: Bring a pot of water to a boil. Cook the soba noodles according to package instructions, typically about 5 minutes. Add the trimmed green beans to the pot during the last minute of cooking so they remain slightly crisp.
- Drain and Rinse: Drain the noodles and green beans in a colander. Rinse them under cold water until cooled to stop further cooking and to separate the noodles.
- Assemble the Bowl: Divide the soba noodles evenly into two bowls. Top with the green beans, then arrange the sliced steak over the vegetables and noodles. Drizzle the prepared dressing generously over the top.
- Garnish and Serve: Sprinkle the finely sliced scallion or shallot and crispy Asian shallots over the bowl for added texture and flavor. Serve immediately and enjoy!
Notes
- Note 1: Use light or regular soy sauce depending on your preference for saltiness.
- Note 2: Rice vinegar gives a mild and slightly sweet acidity to the dressing.
- Note 3: Mirin adds a subtle sweetness and depth common in Japanese cooking.
- Note 4: Rump or sirloin steak works best for a tender bite, but other cuts can be used if preferred.
- Note 5: Choose 100% buckwheat soba noodles for authentic flavor and texture.
- Note 6: Crispy Asian shallots can be purchased ready-made or made at home for crunch and aroma.
