- 3 garlic cloves, minced
- 1 tbsp dried oregano (or other herbs, see notes)

- 1/3 cup (85 ml) lemon juice (from 1 large or 2 medium lemons)
- 1/4 cup (65 ml) olive oil
- 3/4 tsp salt
- 1/4 tsp black pepper
Pork Chops
- 4 bone-in pork chops, about 280g (9 oz) each, 2cm (4/5 inch) thick
- Oil, for cooking (such as vegetable or olive oil)
Instructions
- Prepare the marinade: In a bowl or ziplock bag, whisk together minced garlic, dried oregano, lemon zest, lemon juice, olive oil, salt, and black pepper until well combined. Add the pork chops, ensuring they are fully coated, and let marinate in the refrigerator for a minimum of 1 hour, ideally 3 hours, and up to 12 hours for maximum flavor.
- Bring pork to room temperature: Remove the pork chops from the refrigerator about 20 minutes before cooking to let them come to room temperature, which helps them cook more evenly.
- Prepare for cooking: Shake off any excess marinade from the pork chops but do not wipe them dry. Choose your preferred cooking method (BBQ grill, stovetop skillet, or oven broil).
- Grill the pork chops: Brush the grill or grill plate with oil and heat on high until smoking. Place the pork chops on the grill and cook the first side for 4 minutes until nicely charred. Flip and cook the other side for 3 minutes. Turn the pork chops onto their fat edge briefly to sear the fat. Remove from the grill and let rest for 3 to 5 minutes before serving.
- Stovetop method: Heat a skillet with about 1 tablespoon of oil over high heat. Add the pork chops and sear for 1 minute. Reduce heat slightly to medium-high and cook for an additional 3 minutes on the same side. Flip and cook the other side for 3 minutes. Sear the fat edge briefly. Remove from heat and rest the chops for 3 to 5 minutes before serving.
- Oven method: Preheat the oven to 200°C (390°F) for fan-forced/convection or 220°C (430°F) for a conventional oven. Place the oven rack in the top third of the oven. Place pork chops on a baking tray and bake for 15 minutes. Switch oven to grill/broil mode and grill on high for 5 minutes until the surface browns nicely. Remove and let the chops rest for 3 to 5 minutes before serving.
Notes
- Note 1: You can substitute dried oregano with other herbs like thyme or rosemary according to your preference.
- Note 2: Using bone-in pork chops about 2 cm thick ensures juiciness and flavor.
- Note 3: Marinating time is flexible—at least 1 hour for good flavor, 3 hours is ideal, and up to 12 hours max for best results.
