  • 1/4 tsp pepper

Sauce Reduction

  • 3/4 cup dry white wine (can substitute chicken broth)
  • 2 tbsp unsalted butter, melted (remaining from 5 tbsp)

Crunchy Topping

  • 3/4 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese, finely shredded
  • 1/4 tsp salt
  • 1.5 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 220°C (430°F), suitable for all oven types to ensure the shrimp bake evenly.
  2. Prepare Sauce Reduction: Pour the dry white wine and half of the melted butter (about 2 tbsp) into a 9 x 13 inch (22 x 33 cm) baking pan. Place the pan in the oven for 10 minutes to reduce the liquid, intensifying the flavor of the sauce.
  3. Marinate Prawns: In a mixing bowl, toss the prawns with the remaining melted butter, minced garlic, lemon juice, salt, and pepper. Note that the butter may harden during mixing, which is normal.
  4. Make Crunchy Topping: In a separate bowl, combine the panko breadcrumbs, finely shredded parmesan cheese, salt, and olive oil. Mix well until the panko is evenly coated with oil and cheese, creating a crunchy topping mixture.
  5. Assemble for Baking: Remove the baking pan with reduced sauce from the oven and add the marinated prawns in a single, snug layer to the pan. Spread the crunchy topping evenly over the prawns.
