- Melt Butter: Place the pan over medium heat and melt the butter completely, ensuring it coats the surface evenly.
- Start Cooking the Eggs: Pour the egg mixture into the pan and wait about 5 seconds without stirring to let the edges begin to set.
- Stir Gently: Using the spatula, leisurely push the eggs back and forth in long strokes around the edges to move set egg away and allow uncooked egg to flow underneath. After about 30 seconds, begin folding the eggs gently to form soft curds.
- Cook Until Soft and Custardy: Continue cooking for a total of about 60 seconds until the eggs form soft, custard-like folds and there is no visible liquid egg on the surface.
- Remove from Heat: Take the pan off the stove when the eggs are still slightly undercooked to your liking.
