Chicken Patties

  • 1 cup panko breadcrumbs
  • 1 egg
  • 3/4 cup parmesan, finely grated
  • 1 cup green onion, finely sliced (~2 stems)
  • 2 garlic cloves, minced
  • 1/2 tsp dried sage
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Burger Assembly

  • 4 soft burger buns or brioche buns
  • 1 large avocado (or 2 medium)
  • 60g / 2 oz rocket / arugula or other lettuce of choice
  • 2 tomatoes, sliced
  • 4 slices Swiss cheese (or other cheese)
  • Mayonnaise, relish, ketchup, or tomato sauce (to smear on top bun)

Instructions

  1. Prepare the Chicken Patties: In a large bowl, combine ground chicken, panko breadcrumbs, egg, finely grated parmesan, sliced green onions, minced garlic, dried sage, salt, and pepper. Mix well using your hands until all ingredients are evenly incorporated.
  2. Shape the Patties: Form the mixture into four patties about 1.5 cm (3/5 inch) thick and slightly larger than your buns to accommodate shrinkage during cooking. If the mixture feels sticky, refrigerate for 30 minutes or wet your hands lightly with oil to shape more easily.
  3. Cook the Patties: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the patties to the pan in batches if necessary. Cook each side for 2 minutes until a deep golden color forms, then flip.
  4. Melt the Cheese: After flipping the patties, cook for an additional minute, then place a slice of Swiss cheese on each patty. Cover the skillet with a lid to help the cheese melt thoroughly.
