- 180g (6 oz) salami, finely chopped
- 3/4 cup green olives, finely chopped
- 1/3 cup green onions, finely minced (3–4 stalks)
- 220g (7 oz) sun-dried tomato strips with oil, roughly chopped
- 1/4 cup parsley, finely chopped (or chives)
Garnish and Serving
- Rosemary sprigs for decoration
- Jatz or other crackers, for serving
Instructions
- Prepare the Pan: Spray a loaf pan with oil, then line it with cling wrap leaving an overhang for easy removal.
- Mix Ingredients: Combine the cream cheese, sour cream, seasonings, cheddar, roasted peppers, salami, olives, and green onions in a bowl. Taste the mixture and adjust salt as needed, considering the saltiness of your crackers.
- Shape the Loaf: Transfer the cheese mixture into the prepared loaf pan. Level the surface and press firmly to remove any air pockets. Using a smaller pan will yield a taller loaf.
- Chill: Cover the loaf with the cling wrap overhang and refrigerate for at least 4 hours, or up to 1 week to allow flavors to meld.
- Unmold: When ready to serve, turn the loaf out onto a platter and carefully peel off the cling wrap.
- Garnish: Top the loaf with the chopped sun-dried tomatoes, drizzle with the oil from the tomatoes, and garnish with chopped parsley and rosemary sprigs for a festive touch.
- Serve: Serve the cheese loaf closer to room temperature for best flavor and texture, accompanied with crackers. The loaf is soft enough to scoop with crackers, but knives can be used for spreading if preferred.
