Whipped Feta Dip:
- 8 oz feta cheese
- 4 oz cream cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt, to taste
- Pepper, to taste
Roasted Strawberries:
- 1 lb fresh strawberries
- 2 tbsp sugar (or honey/maple syrup)
- 1 tbsp balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Sprinkle with sugar and drizzle with balsamic vinegar.
- Roast in the oven for about 20 minutes until jammy.
- In a blender, combine feta cheese, cream cheese, olive oil, lemon juice, salt, and pepper.
- Once strawberries are roasted, serve them alongside the whipped feta dip with your choice of bread or veggies.
For the roasted strawberries, slice the strawberries and place them on a baking tray.
Blend until smooth, leaving some texture if desired.
