Bruschetta Topping
- 1 cup diced heirloom cherry or grape tomatoes
- 1 small garlic clove, finely minced
- 6 large basil leaves, julienned
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- ¼ teaspoon salt
- Freshly ground black pepper, to taste
Crostini
- 1 demi French baguette, cut diagonally into ½ inch slices (about 10 slices)
- 1 tablespoon extra virgin olive oil
- 1 small clove garlic, peeled
Whipped Feta Base
- 1 batch Creamy Whipped Feta Dip
For Serving
- Balsamic glaze for drizzling
- 6–10 small basil leaves
Instructions
- Preheat the Oven: Set your oven to 400ºF (200ºC) to prepare for toasting the crostini slices until golden and crispy.
- Prepare Bruschetta Topping: In a medium bowl, combine diced tomatoes, minced garlic, julienned basil, olive oil, balsamic vinegar, salt, and freshly ground black pepper. Stir gently to mix and set aside so flavors meld while you prepare the remaining components.
- Toast Crostini: Arrange the sliced baguette pieces on a baking sheet. Brush each slice on top with extra virgin olive oil. Then, gently rub the peeled garlic clove over one side of each slice to infuse flavor. Bake in the preheated oven for 6 to 8 minutes or until the edges are lightly golden and crisp.
- Prepare Whipped Feta Dip: While the crostini bake, make one batch of the Creamy Whipped Feta Dip as per your recipe. Once ready, transfer the dip into a shallow serving bowl and gently spread it out using the back of a spoon.
- Assemble and Serve: Spoon the prepared bruschetta mixture over the spread whipped feta dip, leaving any excess liquid in the bowl for great flavor. Drizzle balsamic glaze over the top and garnish with small basil leaves. Serve immediately with the warm crostini alongside for dipping and enjoying.
Notes
- You can prepare the Creamy Whipped Feta Dip ahead of time and refrigerate it until needed.
- Use heirloom cherry or grape tomatoes for the freshest, sweetest flavor in the bruschetta topping.
- Be careful not to over-toast the crostini; golden edges add perfect crunch without burning.
- Balsamic glaze adds a sweet and tangy finish but can be omitted or substituted with balsamic vinegar reduction if preferred.
- This dip is best served fresh to maintain the crisp texture of the crostini and the brightness of the bruschetta.
