Description

These delightful vanilla spiced cookies combine the warmth of ginger and cinnamon with the sweetness of vanilla and golden caster sugar. Perfectly crisp around the edges and soft in the center, they are elegantly decorated with royal icing and metallic sprinkles, making them an ideal treat for festive occasions or everyday indulgence.

Wet Ingredients

  • 200g unsalted butter
  • 200g golden caster sugar
  • 1 tsp vanilla extract
  • 1 egg

Dry Ingredients

  • 375g plain flour, plus extra for dusting
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp salt

Decoration

  • 75g royal icing sugar
  • water (to mix with royal icing sugar)
  • metallic sprinkles, to decorate

Instructions

  1. Preheat Oven: Set your oven to 190C (170C fan) or gas mark 5 to prepare for baking the cookies.
  2. Mix Wet Ingredients: Using an electric whisk or stand mixer, beat together the unsalted butter, golden caster sugar, and vanilla extract until well combined and creamy.
  3. Add Egg: Crack in the egg and beat again until fully incorporated, scraping down the sides of the bowl if necessary to ensure even mixing.
  4. Combine Dry Ingredients: In a separate bowl, mix the plain flour, salt, ground ginger, and ground cinnamon thoroughly.
  5. Combine Wet and Dry: Add the dry ingredients to the wet mixture and mix on low speed until the dough is uniform and no streaks of flour remain.
  6. Roll Dough: Lightly dust a clean surface with flour and roll the dough out to a thickness of 6mm, preparing for cutting.
  7. Cut Shapes: Use cookie cutters to create shapes for your cookies. For the house, cut a 9 x 6cm door (rectangular cutter), then create an arch with a round cutter. Cut windows at 4 x 4cm squares and a star about 5.5cm wide. For the wreath, cut a 4cm disc and then a 1.5cm disc from its center.
  8. Bake Cookies: Place the cut cookies onto baking sheets spaced apart and bake for 12-15 minutes, or until edges are golden. Smaller cookies may bake faster, so monitor closely.
  9. Cool Cookies: Let the cookies cool on the baking sheets for 10 minutes before transferring them to wire racks to cool completely.
  10. Prepare Icing: Mix the royal icing sugar with just enough water to create a thick icing suitable for piping.
  11. Decorate Cookies: Spoon the icing into a piping bag with a small round nozzle or snip the end and decorate the cookies. Add metallic sprinkles as desired.
  12. Dry and Store: Allow the decorated cookies to dry for a couple of hours before handling or storing in an airtight container for up to two days.
