Description

This Turkey Lavash Wrap is a fresh and flavorful lunch option combining creamy goat cheese and Greek yogurt spread with tender deli turkey, crisp cucumbers, vibrant roasted red peppers, and peppery arugula tossed with dill and lemon. Wrapped in soft lavash bread, this easy-to-make wrap is perfect for a quick meal or picnic.

Ingredients

Scale

Cheese Spread

  • 1 scallion, thinly sliced
  • 4 oz. crumbled goat cheese
  • 4 oz. plain whole-milk Greek yogurt
  • 3 tsp. extra-virgin olive oil, divided
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Salad

  • 4 cups loosely packed arugula
  • 1/2 cup coarsely chopped fresh dill
  • 1 tsp. fresh lemon juice

Wrap Filling & Assembly

  • 4 store-bought or homemade lavash bread sheets
  • 1/2 lb. sliced deli turkey, divided
  • 4 roasted red peppers, cut into thin strips (about 1 cup), divided
  • 4 Persian cucumbers (or 2 English cucumbers), cut lengthwise into quarters, divided

Instructions

  1. Prepare the Cheese Spread: In a medium bowl, combine the thinly sliced scallion, crumbled goat cheese, plain Greek yogurt, and 2 teaspoons of extra-virgin olive oil. Season generously with kosher salt and freshly ground black pepper. Stir until well combined and creamy.
  2. Make the Arugula Salad: In a large bowl, gently toss the arugula, chopped fresh dill, freshly squeezed lemon juice, and the remaining 1 teaspoon of olive oil. Mix just enough to coat the greens evenly without bruising them.
  3. Assemble the Wraps: Lay out each lavash sheet on a clean work surface. Spread an even layer of the goat cheese mixture over the lavash, leaving about a 1-inch border on all sides to help with rolling.
  4. Add the Fillings: Divide the sliced deli turkey, roasted red pepper strips, cucumber quarters, and the arugula salad evenly among the lavash sheets, placing them over the cheese spread.
  5. Roll the Wraps: Fold one half of the lavash over the filling like a burrito and then roll tightly to enclose all the ingredients. Tuck in the ends securely to seal the wrap.
  6. Serve: Cut each wrap in half diagonally for easier handling and serve immediately, or wrap tightly in foil to take on the go.

Notes

  • Use homemade lavash or store-bought lavash; both work well for this recipe.
  • For added crunch, consider adding thinly sliced red onion or radishes.
  • Substitute the goat cheese with cream cheese if preferred for a milder flavor.
  • Roasted red peppers can be jarred or homemade from fresh peppers.
  • These wraps can be made a few hours in advance; keep refrigerated and wrap tightly in plastic wrap to maintain freshness.
  • To keep wraps from becoming soggy, pat cucumbers dry before assembling.
