These Tuna Sweetcorn Burgers are a quick and delicious meal combining flaky tuna, sweetcorn, and cheddar cheese, shaped into patties and pan-fried to golden perfection. Served in wholegrain rolls with fresh lettuce and salsa, they make a nutritious and satisfying lunch or dinner option.

For the Tuna Burgers

  • 85g white bread, torn into pieces
  • 198g can sweetcorn, drained
  • 2 x 185g cans tuna in water, drained well
  • 25g grated cheddar cheese
  • 3 spring onions, finely chopped
  • 1 egg, beaten
  • 2 tbsp vegetable oil

Instructions

  1. Prepare Breadcrumbs and Corn Mixture: Whizz the torn white bread pieces in a food processor until they form fine crumbs. Transfer the bread crumbs to a large bowl. Next, use the food processor to blend half of the drained sweetcorn until finely chopped.
  2. Combine Ingredients: Add the chopped sweetcorn, the remaining whole sweetcorn, drained tuna, grated cheddar, finely chopped spring onions, and some seasoning (salt and pepper) into the bowl with the breadcrumbs. Mix all the ingredients well to combine thoroughly.
  3. Bind the Mixture: Gradually incorporate the beaten egg into the mixture bit by bit, stirring each time, until the mixture becomes sticky enough to hold its shape when formed. You might not need to use the entire egg.
  4. Shape the Burgers: Divide the mixture into four equal portions and shape each one into a burger patty of consistent thickness to ensure even cooking.
  5. Cook the Burgers: Heat the vegetable oil in a non-stick pan over medium heat. Once hot, place the burgers in the pan and cook them for 5 minutes on each side or until they are golden brown and heated through the middle.
  6. Assemble and Serve: Place each cooked burger inside a wholegrain bread roll. Add fresh lettuce leaves and a generous dollop of salsa to finish. Serve immediately while warm and enjoy!

Notes

  • For a different serving option, shape the mixture into 16 small meatballs and fry in batches, turning for 8–10 minutes until hot and golden. Serve with tomato sauce and spaghetti for a tasty pasta dish.
  • Ensure the tuna is well drained to prevent the mixture from becoming too wet.
  • If the mixture feels too dry, you can add a small splash of water or an additional egg white to help bind it.
  • Use fresh spring onions for the best flavor, but shallots or mild red onion can be alternatives.
  • These burgers can be cooked in advance and reheated on a low oven or in a skillet for convenience.
