Steak Marinade:
- 2 ribeye steaks (16 ounces), trimmed
- Salt and pepper, to taste
- ¼ cup olive oil
- ¼ cup soy sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar (or honey)
- 1 tablespoon Dijon mustard
- 6 cloves garlic, minced or pressed
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 teaspoon ground black pepper
Roasted Garlic Butter:
- 6 bulbs garlic, tops sliced off
- ¼ cup olive oil
- 1 cup butter (2 sticks), room temperature
- 1 teaspoon fresh thyme, finely chopped
- ½ teaspoon fresh rosemary, finely chopped
- Salt and pepper, to taste
Roasted Asparagus:
- 2 bunches asparagus, washed, dried, and trimmed
- 3 tablespoons olive oil
- 1/2 medium lemon, juiced
- Salt and pepper, to taste
Instructions
- Make Steak Marinade: Preheat the oven to 425 degrees. Pat steaks dry, poke all over gently with a fork, and season lightly with salt. In a medium bowl, mix olive oil, soy sauce, Worcestershire sauce, balsamic vinegar, brown sugar (or honey), Dijon mustard, garlic, thyme, rosemary, and black pepper. Pour the marinade into a gallon ziploc bag and add the steaks. Marinate in the refrigerator for at least 2 hours, up to overnight. Remove steaks from the fridge 30 minutes before cooking.
- Roasted Garlic Butter: Roast garlic bulbs in a skillet. Combine roasted garlic with butter, thyme, rosemary, salt, and pepper.
- Roast Asparagus: Toss asparagus with olive oil, lemon juice, salt, and pepper. Roast on a baking sheet until tender.
- Cook the Steaks: Sear marinated steaks in a hot skillet for 3–4 minutes per side for medium-rare. Let rest before slicing.
- To Serve: Slice steaks against the grain, plate with asparagus, and top with garlic herb butter. Serve hot and enjoy!
