Turkey Patties

  • 400g turkey breast or fillet, roughly chopped
  • 1 lemongrass stalk, finely chopped
  • 2 garlic cloves, crushed
  • Zest and juice of 1 lime
  • 3 tbsp low-sodium soy sauce, divided
  • Small bunch coriander, chopped, divided
  • 1 red chilli, deseeded and chopped, divided
  • Black pepper, to taste

Noodle Salad

  • 2 nests medium wheat noodles
  • 300g pack mixed peppers stir-fry vegetables
  • Sweet chilli sauce, to serve (optional)

Instructions

  1. Prepare the Turkey Mixture: Place the roughly chopped turkey breast in a food processor and pulse until finely minced. Add the finely chopped lemongrass, crushed garlic, lime zest, half of the soy sauce, half of the chopped coriander, and half of the chopped red chilli. Pulse again until all ingredients are well combined.
  2. Form Patties: Transfer the turkey mixture to a mixing bowl, season with black pepper, and mix lightly. Shape the mixture into 8 evenly sized patties.
  3. Grill the Patties: Preheat the grill to medium heat. Place the patties on a non-stick baking tray and grill for 3-4 minutes on each side, or until the patties are thoroughly cooked and reach an internal temperature of 75°C (165°F).
  4. Prepare the Noodle Salad: While the patties are grilling, soak the medium wheat noodles according to the package instructions, then drain well. In a large bowl, combine the drained noodles with the mixed peppers stir-fry vegetables.
  5. Dress the Salad: Add the remaining soy sauce, lime juice, and the rest of the chopped coriander and chilli to the noodle and vegetable mixture. Toss everything thoroughly to combine and evenly distribute the flavors.
  6. Serve: Divide the noodle salad between plates and serve alongside the hot Turkish patties. Offer sweet chilli sauce on the side for dipping, if desired.
