  • 140g thin-stemmed broccoli
  • 140g cooked prawns
  • 1 small red chilli, thinly sliced

Instructions

  1. Prepare Teriyaki Sauce: In a small saucepan, combine the low-sodium soy sauce, mirin, lemon juice, and caster sugar. Heat the mixture over medium heat and simmer gently for 5 minutes until it thickens into a syrupy consistency. Remove from heat and set aside.
  2. Cook Noodles and Vegetables: Bring a large saucepan of salted water to a boil. Add the soba noodles and thin-stemmed broccoli to the boiling water and cook for about 3 minutes. Add the cooked prawns to the saucepan just a few seconds before draining to warm them through without overcooking.
  3. Drain and Plate: Drain the noodles, broccoli, and prawns thoroughly. Divide the mixture evenly between two plates.
