- 1 shallot (chopped)
- 2 cloves garlic (minced)
- 1 medium zucchini (grated and drained)
- 4 ounces cream cheese (softened)
- ¼ cup shredded parmesan
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon Italian seasoning
- ⅓ cup chopped fresh basil
- 1 Roma tomato (thinly sliced)
Instructions
- Preheat the Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Pound the Chicken: Place each chicken breast between plastic wrap and pound to ¼ inch thickness.
- Season the Chicken: Season both sides of the chicken with salt, pepper, and garlic powder.
- Saute the Aromatics: Saute the shallot and garlic until fragrant. Set aside.
- Prepare the Filling: Combine sauteed aromatics, zucchini, cream cheese, parmesan, salt, pepper, and herbs.
