- 100 gram Mushroom, sliced
- 60 gram Kale, chopped
- 1/2 Red Chili Pepper, sliced
- 100 gram Bean Sprouts
Sauce
- 1 teaspoon Dark Soy Sauce
- 2 tablespoon Light Soy Sauce
- 1 teaspoon Sesame Oil
- 1 pinch Sesame Seeds
- 1 pinch Crushed Red Pepper Flakes

- 1 tablespoon Olive Oil
- 2 packages Udon Noodles
Instructions
- Prepare Scallions: Cut the scallion into white and green parts and slice them up. Set aside separately to use at different stages of cooking.
- Make the Sauce: In a small bowl, combine dark soy sauce, light soy sauce, sesame oil, sesame seeds, and crushed red pepper flakes. Mix well and set aside.
- Sauté Scallion Whites: Heat olive oil in a large non-stick frying pan over medium heat. Add the white parts of the scallion and fry for about 1 minute until slightly golden on the edges.
- Cook Vegetables: Add mushrooms, kale, and red chili pepper to the pan. Stir-fry for 4-5 minutes until vegetables soften and flavors meld.
- Add Noodles: Incorporate the udon noodles into the pan with the vegetables, ensuring they are warmed through.
- Add Sauce and Toss: Pour the prepared sauce over the noodles and vegetables. Toss and stir for 3-4 minutes to evenly coat all ingredients with the sauce.
- Finish with Bean Sprouts and Scallion Greens: Turn off the heat and immediately add bean sprouts and the green parts of the scallions. Mix gently for 30-40 seconds to combine without overcooking.
- Garnish and Serve: Sprinkle extra sesame seeds on top for garnish and serve the dish warm.

- Use fresh udon noodles for the best texture and flavor; dried noodles can be substituted but may require boiling first.
- The red chili pepper can be adjusted or omitted based on preferred spice level.
- To make this dish vegetarian, ensure soy sauce used is free of animal derivatives.
