  • 2 tablespoon Light Soy Sauce
  • 1 teaspoon Sesame Oil
  • 1 pinch Sesame Seeds
  • 1 pinch Crushed Red Pepper Flakes

  • 1 tablespoon Olive Oil
  • 2 packages Udon Noodles

Instructions

  1. Prepare Scallions: Cut the scallion into white and green parts and slice them up. Set aside separately to use at different stages of cooking.
  2. Make the Sauce: In a small bowl, combine dark soy sauce, light soy sauce, sesame oil, sesame seeds, and crushed red pepper flakes. Mix well and set aside.
  3. Sauté Scallion Whites: Heat olive oil in a large non-stick frying pan over medium heat. Add the white parts of the scallion and fry for about 1 minute until slightly golden on the edges.
  4. Cook Vegetables: Add mushrooms, kale, and red chili pepper to the pan. Stir-fry for 4-5 minutes until vegetables soften and flavors meld.
  5. Add Noodles: Incorporate the udon noodles into the pan with the vegetables, ensuring they are warmed through.
  6. Add Sauce and Toss: Pour the prepared sauce over the noodles and vegetables. Toss and stir for 3-4 minutes to evenly coat all ingredients with the sauce.
  7. Finish with Bean Sprouts and Scallion Greens: Turn off the heat and immediately add bean sprouts and the green parts of the scallions. Mix gently for 30-40 seconds to combine without overcooking.
  8. Garnish and Serve: Sprinkle extra sesame seeds on top for garnish and serve the dish warm.
