Description
A vibrant and zesty Sriracha & lime prawn linguine combining wholemeal pasta, succulent king prawns, and fresh vegetables, all cooked in a flavorful low-salt vegetable broth with a spicy kick and citrus brightness.

- 280g king prawns

- 2 garlic cloves, crushed
- 300g long-stemmed broccoli, halved lengthways, thicker stems halved
- 200g frozen peas
- 2 limes, zested and juiced
Dry & Pantry
- 360g wholemeal linguine
- 750ml low-salt vegetable stock
- 1 tbsp rapeseed oil
- 3 tbsp sriracha, plus extra to serve (optional)
Instructions
- Cook prawns and garlic: Heat 1 tbsp of rapeseed oil in a saucepan over medium-high heat. Add the king prawns and crushed garlic cloves, cooking for about 3 minutes until the prawns turn pink. Once cooked, remove the prawns and garlic from the pan and set aside in a bowl.
- Cook pasta and broccoli: Pour the 750ml low-salt vegetable stock into the same pan, season lightly, and bring it to a boil. Add the wholemeal linguine and cover the pan. Cook for 10 minutes, stirring occasionally to prevent sticking. After 5 minutes of cooking, add the halved long-stemmed broccoli to the pan to cook alongside the pasta.
- Add peas and finish cooking: When the pasta and broccoli are nearly cooked through, add the frozen peas. Uncover the pan and continue cooking for about 2-3 minutes until the peas are defrosted and heated through.
- Combine flavors and serve: Stir in 3 tablespoons of sriracha and the zest and juice of 2 limes into the pasta and vegetable mixture. Toss the prawns and garlic back into the pan to warm through gently. Divide the prawn linguine between serving bowls and top with extra sriracha if desired or a grind of black pepper for extra flavor.
