Ingredients

Scale

Main Soup:

  • 2 tsp vegetable oil
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced
  • 2 green onions, white part sliced
  • 4 tsp gochujang paste
  • 2 tbsp all-purpose soy sauce
  • 1 tbsp white vinegar
  • 1 tsp brown sugar
  • 4 1/2 cups chicken stock or 4 1/2 cups water mixed with 2 stock cubes
  • 160 g (5.5oz) egg noodles

Additional Toppings:

  • 2 baby bok choy, sliced lengthwise
  • 2 Thai bird’s eye chilis, sliced
  • 2 lime wedges
  • Fresh cilantro leaves
  • 4 tbsp carrot, cut into matchsticks
  • 23 tsp chili oil

Instructions

  1. Heat Oil: In a dutch oven or medium-sized pot, heat vegetable oil. Saute garlic, ginger, and white part of green onion until fragrant.
  2. Add Flavors: Stir in gochujang, soy sauce, vinegar, and brown sugar. Pour in chicken stock and bring to a boil.
  3. Cook Noodles: Add egg noodles to the pot and cook for 1 minute less than package instructions.
  4. Finish Soup: Turn off the heat and add bok choy. Let it sit for a minute. Pour the soup into serving bowls.
  5. Top and Serve: Garnish with sliced red chili, lime wedges, cilantro, matchstick carrots, and green onions. Drizzle with chili oil before serving.

Notes

  • You can adjust the spiciness by adding more or less chili oil.
  • Feel free to customize the toppings with your favorite ingredients like tofu, mushrooms, or bean sprouts.
  • For a vegetarian option, use vegetable stock instead of chicken stock.
