This Spicy Asian Noodle Soup is a flavorful and comforting dish that brings together the bold flavors of gochujang, soy sauce, and fresh vegetables in a delicious broth. Perfect for a cozy night in or when you’re craving a bowl of hearty soup with a kick!

Main Soup:
- 2 tsp vegetable oil
- 2 garlic cloves, minced
- 1 tsp ginger, minced
- 2 green onions, white part sliced
- 4 tsp gochujang paste
- 2 tbsp all-purpose soy sauce
- 1 tbsp white vinegar
- 1 tsp brown sugar
- 4 1/2 cups chicken stock or 4 1/2 cups water mixed with 2 stock cubes
- 160 g (5.5oz) egg noodles
Additional Toppings:
- 2 baby bok choy, sliced lengthwise
- 2 Thai bird’s eye chilis, sliced
- 2 lime wedges
- Fresh cilantro leaves
- 4 tbsp carrot, cut into matchsticks
- 2–3 tsp chili oil
Instructions
- Heat Oil: In a dutch oven or medium-sized pot, heat vegetable oil. Saute garlic, ginger, and white part of green onion until fragrant.
- Add Flavors: Stir in gochujang, soy sauce, vinegar, and brown sugar. Pour in chicken stock and bring to a boil.
- Cook Noodles: Add egg noodles to the pot and cook for 1 minute less than package instructions.
- Finish Soup: Turn off the heat and add bok choy. Let it sit for a minute. Pour the soup into serving bowls.
- Top and Serve: Garnish with sliced red chili, lime wedges, cilantro, matchstick carrots, and green onions. Drizzle with chili oil before serving.
Notes
- You can adjust the spiciness by adding more or less chili oil.
- Feel free to customize the toppings with your favorite ingredients like tofu, mushrooms, or bean sprouts.
- For a vegetarian option, use vegetable stock instead of chicken stock.
