Instructions
- Step 1: Preheat the oven to 180C/160C fan/gas mark 4. Heat 1 tsp of olive oil in a large, deep flameproof casserole with a heavy base and a lid. Add the onions with a splash of water, cover, and cook over medium heat for 5 minutes until slightly softened.
- Step 2: Stir the onions well, then add the sliced aubergines. Cover again and cook for another 5 minutes to soften them.
- Step 3: Add the ginger, garlic, fresh turmeric (or ground), allspice, cumin seeds, and ground coriander. Stir everything together well to coat the vegetables with the spices.
- Step 4: Tip in the chickpeas with their water, diced red peppers, bouillon powder, dried apricots, chicken pieces, and a full can of water (400ml). Stir in the chopped coriander.
