Marinade and Salmon

  • Thumb-sized piece ginger, peeled and finely chopped
  • 1 garlic clove, finely chopped
  • 6 tbsp light soy sauce
  • 4 tbsp rice wine vinegar
  • 4 salmon fillets, about 140g/5oz each

Noodles and Vegetables

  • 200g soba noodles
  • 350g frozen soya beans, defrosted
  • 2 x 175g packs baby corn and mange tout mix, chopped

Instructions

  1. Prepare the marinade and marinate salmon: In a small bowl, combine finely chopped ginger, garlic, light soy sauce, and rice wine vinegar. Add the salmon fillets to the marinade, ensuring they are well-coated. Let them marinate for 10 minutes to absorb the flavors.
  2. Cook the salmon: Heat a large non-stick frying pan over medium-high heat. Using a slotted spoon, lift the salmon fillets from the marinade and place them in the pan. Fry each side for 2-3 minutes until the fish is cooked through and has a slight golden sear.
  3. Simmer with marinade sauce: After frying the salmon, pour in the reserved marinade along with a splash of water into the pan. Let it bubble gently for 1 minute to thicken slightly and coat the salmon with the sauce.
  4. Cook the soba noodles and vegetables: Prepare the soba noodles according to the package instructions. About 3 minutes before the noodles finish cooking, add the defrosted soya beans to the boiling water. In the final minute, add the chopped baby corn and mange tout mix. Once cooked, drain everything thoroughly to remove excess water.
  5. Serve: Plate the drained noodles and vegetables, then top with the cooked salmon fillets. Spoon the soy and ginger sauce from the pan over the dish to enhance the flavor before serving.

  • The marinade also doubles as a flavorful sauce for serving, so be sure to simmer it to coat the salmon well.
  • Defrost frozen soya beans completely before adding to the noodles for even cooking.
  • Adjust cooking times for salmon based on thickness to avoid overcooking.
