For the Salad:
- 1 lb cooked chicken (shredded)
- 1 can (15.5 oz) black beans, drained and rinsed
- 1 can (15.25 oz) corn, drained
- 1 fresh jalapeño (deseeded, finely chopped)
- 1 cup cherry tomatoes (cut into quarters)
- 1 small red onion (finely chopped)
- ¼ cup pumpkin seeds
For the Dressing:
- ¾ cup Greek yogurt
- 2 fresh limes (juiced)
- 1 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp paprika
- ¼ tsp salt
Instructions
- In a medium bowl, combine all of the dressing ingredients. Mix well.
- In a large bowl, combine shredded chicken, black beans, corn, jalapeno, cherry tomatoes, red onion, and pumpkin seeds.
- Cover with the dressing and stir to combine.
