- 2 medium onions, roughly chopped
- 1 garlic clove, crushed
- 500g mushrooms, finely chopped (chestnut or button mushrooms recommended)
- 750ml chicken stock
- 4 tbsp single cream, plus extra to serve
- Small handful flat-leaf parsley, roughly chopped, to serve (optional)
Instructions
- Prepare Ingredients: Roughly chop the onions and crush the garlic clove. Finely chop the mushrooms, using chestnut or button mushrooms for the best flavor and texture.
- Add to Soup Maker: Place the onions, garlic, chopped mushrooms, and chicken stock into the soup maker. Be careful not to exceed the maximum fill line indicated on your soup maker.
- Cook Soup: Select and start the ‘smooth soup’ function on your soup maker. This cycle will cook and blend the ingredients to a smooth consistency automatically.
- Season and Add Cream: After the cycle finishes, season the soup well with salt and pepper to taste. Stir in the 4 tablespoons of single cream for a richer flavor.
- Blend Again: Briefly blend the soup again to incorporate the cream fully, ensuring a smooth and creamy texture throughout.
- Serve: Ladle the soup into bowls and garnish with chopped flat-leaf parsley and a swirl of extra single cream if desired. Serve hot and enjoy!
