  • 4 tbsp single cream, plus extra to serve

Instructions

  1. Prepare Ingredients: Roughly chop the onions and crush the garlic clove. Finely chop the mushrooms, using chestnut or button mushrooms for the best flavor and texture.
  2. Add to Soup Maker: Place the onions, garlic, chopped mushrooms, and chicken stock into the soup maker. Be careful not to exceed the maximum fill line indicated on your soup maker.
  3. Cook Soup: Select and start the ‘smooth soup’ function on your soup maker. This cycle will cook and blend the ingredients to a smooth consistency automatically.
  4. Season and Add Cream: After the cycle finishes, season the soup well with salt and pepper to taste. Stir in the 4 tablespoons of single cream for a richer flavor.
  5. Blend Again: Briefly blend the soup again to incorporate the cream fully, ensuring a smooth and creamy texture throughout.
  6. Serve: Ladle the soup into bowls and garnish with chopped flat-leaf parsley and a swirl of extra single cream if desired. Serve hot and enjoy!
