  • 750ml low salt or homemade chicken or vegetable stock

Cheese

  • 140g Stilton, or other blue cheese, crumbled

Instructions

  1. Prepare Ingredients: Finely chop the onion, slice the celery and leek, dice the potato, and roughly chop the broccoli to prepare all vegetables for the soup maker.
  2. Load Soup Maker: Place all the prepared vegetables and the low salt or homemade chicken or vegetable stock into the soup maker, ensuring not to fill above the maximum fill line.
  3. Cook Soup: Select and press the ‘smooth soup’ function on your soup maker. This will cook and blend the ingredients into a smooth consistency automatically.
  4. Add Stilton Cheese: Once the cooking cycle is complete, season the soup to taste with salt and pepper, then stir in most of the crumbled Stilton cheese.
  5. Blend Cheese into Soup: Briefly blend the soup again until the Stilton cheese melts completely, creating a creamy texture and rich flavor.
  6. Serve: Season with additional black pepper if desired, and garnish the soup with the reserved crumbled Stilton on top before serving.

Notes

  • Ensure not to exceed the maximum fill line of your soup maker to avoid overflow or malfunction.
  • You can substitute Stilton with another blue cheese if preferred, such as Roquefort or Gorgonzola.
