  • 2 tbsp olive oil
  • 3 garlic cloves, crushed
  • 2 tbsp tomato purée
  • 1 tsp smoked paprika
  • 200ml vegetable stock
  • small handful of thyme sprigs
  • 350g roasted vegetables (such as peppers, courgettes, aubergines, and onions)
  • 700g jar white beans, drained and rinsed
  • 250g ricotta
  • Crusty bread, to serve
  • Green salad, to serve

Instructions

  1. Preheat Oven: Heat the oven to 200°C (180°C fan) or gas mark 6 to prepare for roasting the traybake.
  2. Mix Base Sauce: In a roasting tin, combine half of the olive oil with the crushed garlic, tomato purée, smoked paprika, vegetable stock, and thyme sprigs. Stir well to create a flavorful base.
  3. Add Vegetables and Beans: Stir in the roasted vegetables and drained white beans into the sauce mixture ensuring everything is evenly coated.
  4. Add Ricotta: Make a small well in the middle of the mixture and nestle the ricotta there. Drizzle the remaining olive oil over the top for added richness and moisture.
  5. Season and Roast: Season the mixture with salt and pepper to taste, then place the roasting tin in the oven. Roast for 30-35 minutes until the sauce is reduced and golden on top.
  6. Serve: Once cooked, serve the traybake straight from the tin with crusty bread for dipping and a fresh green salad dressed with lemon for a light, balanced meal.
