  • Knob of fresh root ginger, peeled and shredded
  • 100g soba noodles

Dressing

  • 1 tbsp reduced-salt soy sauce, plus extra to serve if you like
  • 1 tbsp tahini paste or peanut butter
  • 2 tbsp water (adjust as needed for consistency)

Main Ingredients

  • 125g pack smoked trout fillets, flaked
  • ½ large cucumber, sliced
  • 6 spring onions, finely sliced

Garnish

  • Sesame seeds, to serve
  • Sesame oil, to serve (optional)

Instructions

  1. Prepare the broth and cook noodles: In a large pan, bring the vegetable stock and shredded fresh root ginger to a boil. Add the soba noodles and simmer for 4 minutes until the noodles are tender.
  2. Drain and cool noodles: Drain the cooked noodles and rinse them under cold running water to stop the cooking process and cool them down.
  3. Make the dressing: In a bowl, mix together the reduced-salt soy sauce, tahini paste (or peanut butter), and 2 tablespoons of water. Stir until the mixture reaches a smooth, creamy consistency similar to single cream. Add more water if needed to adjust texture.
  4. Toss noodles and ingredients: Combine the cooled soba noodles with the flaked smoked trout and sliced cucumber. Pour the dressing over and toss gently to coat evenly.
  5. Garnish and serve: Scatter the finely sliced spring onions and sesame seeds over the top. Drizzle with a little sesame oil if desired. Serve immediately with extra soy sauce on the side if preferred.
