Instructions

  1. Prepare Baking Sheet and Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking.
  2. Boil Baby Potatoes: Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt and bring the water to a boil. Reduce to a simmer and cook for 15 to 20 minutes, until the potatoes are fork-tender. Drain and let them cool slightly for about 3 minutes.
  3. Smash Potatoes: Arrange the boiled potatoes on the prepared baking sheet. Using a potato masher or the flat bottom of a glass, gently press down on each potato until it’s about 1/2-inch thick.
  4. Season and Oil Potatoes: Drizzle the smashed potatoes evenly with olive oil. Sprinkle the garlic powder, smoked paprika, sea salt, and freshly ground black pepper over them. Toss gently to make sure each potato is evenly coated with seasoning and oil.
  5. Roast Potatoes: Place the baking sheet in the oven and roast the potatoes for 20 to 25 minutes, turning them once halfway through. Roast them until they are golden brown and crisp around the edges.
  6. Add Cheese and Onions: Remove the potatoes from the oven and sprinkle the shredded cheddar cheese and sliced green onions over the top. Return the baking sheet to the oven for another 3 to 5 minutes, or until the cheese melts and becomes bubbly.
