Instructions

  2. Make the sponge batter: In a large bowl, combine the melted butter, caster sugar, and light brown soft sugar. Beat in the eggs and milk until well blended. Fold in the self-raising flour, baking powder, ground ginger, and cinnamon. Whisk the mixture gently to remove any lumps and form a smooth batter.
  3. Pour batter into basin: Transfer the prepared batter into the greased slow cooker basin, smoothing the top evenly.
  4. Prepare the sauce mixture: In a small bowl, mix the cornflour with 1 teaspoon of water until a smooth paste forms and set aside. In a separate container, combine the light brown soft sugar and ground ginger with 350ml boiling water, stirring until the sugar dissolves fully. Stir in the cornflour paste until well incorporated.
  5. Add the sauce over the batter: Gently pour the prepared ginger sauce evenly over the top of the batter in the slow cooker. Do not stir.
  6. Cook the pudding: Cover and cook on high for 1 hour 30 minutes to 2 hours 30 minutes, depending on your slow cooker’s strength. The pudding is done when the sponge is set and firm to the touch.
