  • 1 jalapeño, seeded and finely diced (optional)

  • 2 tbsp olive oil

Instructions

  1. Cook Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and sauté, stirring occasionally, until they are golden and tender, about 8 to 10 minutes. Once cooked, remove the potatoes from the skillet and set them aside.
  2. Brown Chorizo: Add the remaining tablespoon of olive oil to the same skillet. Place the sliced chorizo in the pan and cook for 2 to 3 minutes until it starts to brown and releases its flavorful oils into the skillet.
  3. Sauté Aromatics: Add the chopped onion, diced red bell pepper, and jalapeño (if using) to the skillet with the chorizo. Sauté for 3 to 4 minutes until the vegetables soften. Then add the minced garlic and cook for an additional 30 seconds to bring out its aroma.
  4. Combine Potatoes and Spices: Return the sautéed potatoes to the skillet. Sprinkle the smoked paprika, ground cumin, salt, and black pepper over the mixture. Stir well to evenly coat and season everything.
  5. Cook Shrimp: Push the mixture towards the edges of the skillet to create space in the center. Add the shrimp to the center and cook for 1 to 2 minutes on each side until the shrimp turn pink and opaque. Then mix all ingredients together evenly.
  6. Poach Eggs: Create four wells in the shrimp and chorizo mixture. Crack one egg into each well. Lower the heat to a gentle setting, cover the skillet, and cook for 4 to 5 minutes until the egg whites are just set. For firmer yolks, cook an additional 1 to 2 minutes.
  7. Finish and Serve: Garnish the skillet with chopped fresh cilantro and serve immediately for a delicious, hearty breakfast.
