Ingredients
Scale
Steak
- 2 pieces ribeye or filet mignon steaks
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp butter (for basting)
- 1 sprig rosemary (optional)
Shrimp
- 12 pieces large shrimp (peeled and deveined)
- 2 tbsp butter
- 2 cloves garlic (minced)
- 1 tsp smoked paprika
- 1 tsp lemon juice (freshly squeezed)
- 1 tsp salt (for seasoning shrimp)
Instructions
- Season and Cook Shrimp: Add the peeled and deveined shrimp to a bowl, season with smoked paprika and salt. Heat a skillet over medium-high heat and cook the shrimp for 2 minutes on each side until they turn pink and develop a slight char.
- Prepare and Sear Steaks: Drizzle olive oil in the same skillet, season steaks with salt and black pepper, then sear them for 4-5 minutes per side to reach medium-rare doneness. During the last minute, add butter and a sprig of rosemary to the pan and baste the steaks with the melted butter for enhanced flavor.
- Rest the Steaks: Remove the steaks from the skillet and let them rest for 5 minutes to allow juices to redistribute before slicing.
- Sauté Garlic: In the same skillet, melt the remaining butter and sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
- Cook Shrimp Again: Add the seasoned shrimp back into the skillet and cook for 2 minutes per side until pink and slightly charred, ensuring they are heated through and coated with the garlic butter.
- Add Lemon Juice and Toss: Drizzle freshly squeezed lemon juice over the shrimp and toss to coat evenly, adding a fresh citrusy brightness.
- Serve: Plate the sliced steak alongside the garlic butter shrimp and serve immediately to enjoy this decadent surf and turf meal.
Notes
- Letting the steak rest after cooking is essential for juicy, tender results.
- Peeled and deveined shrimp speed up cooking and improve texture.
- Adjust steak cooking time based on desired doneness.
- Fresh rosemary is optional but adds aromatic flavor during basting.
- Use freshly squeezed lemon juice for the best citrus flavor.
