  • ¼ teaspoon toasted sesame oil
  • ½ teaspoon turmeric

Veggies and Toppings:

  • 1½ tablespoons sesame oil
  • ½ yellow onion, diced
  • 3½ ounces sliced shiitake mushrooms
  • 2 cloves garlic, minced
  • 1 handful of fresh baby spinach
  • 1 tablespoon toasted sesame seeds
  • ¼ cup roasted peanuts, chopped
  • 2 green onions (greens only, sliced)

Peanut Sauce:

  • ¼ cup creamy peanut butter
  • 1 tablespoon seasoned rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • ¼ teaspoon ground ginger
  • ½ teaspoon Sriracha
  • 2 tablespoons unsweetened coconut milk (or more, as needed)

Instructions

  1. Press the tofu: Place the tofu on a plate, cover with foil, and press with weight for 15 minutes. Drain liquid.
  2. Mash the tofu: Crumble the pressed tofu in a bowl.
  3. Add flavorings: Mix in nutritional yeast, soy sauce, soy milk, sesame oil, and turmeric.
  4. Heat sesame oil: In a skillet, heat sesame oil.
  5. Sauté veggies: Cook onions, mushrooms, and garlic.
  6. Cook tofu mixture: Add tofu mix to skillet and cook until browned.
  7. Add spinach: Stir in spinach until wilted.
  8. Finish scramble: Mix in sesame seeds, peanuts, and green onions.
  9. Prepare peanut sauce: Whisk together peanut butter, vinegar, soy sauce, honey, ginger, Sriracha, and coconut milk.
