Description

These Roasted Grape & Brie Crostini offer a delightful blend of sweet, savory, and crunchy flavors. Juicy roasted grapes paired with creamy melted brie on crispy baguette slices, finished with a drizzle of honey, toasted walnuts, fresh rosemary, and a touch of sea salt, make this appetizer a perfect crowd-pleaser for any occasion.

Ingredients

Scale

Fruit

  • 4 cups seedless red grapes

Bread & Cheese

  • 1 French baguette, cut diagonally into 1/2 inch slices
  • 8 ounces brie cheese, sliced (enough slices for all crostini)

Other Ingredients

  • 2 tablespoons olive oil, divided
  • 12 tablespoons honey, for drizzling
  • Maldon sea salt, for sprinkling
  • ¼ cup chopped toasted walnuts
  • 1 teaspoon fresh diced rosemary

Instructions

  1. Roast the Grapes: Preheat your oven to 400°F (204°C). Spread the seedless red grapes evenly onto a nonstick baking sheet. Drizzle with 1 tablespoon of olive oil and sprinkle a pinch of Maldon sea salt. Toss gently to coat all grapes evenly. Roast in the oven for about 15 minutes, or until the grapes start to burst and shrivel slightly, releasing their natural sweetness. Remove and set aside to cool, keeping the oven temperature steady.
  2. Prepare the Baguette and Brie: While the grapes are roasting, arrange the baguette slices on a separate baking sheet. Brush each slice generously with the remaining 1 tablespoon of olive oil on one side. Place a slice of brie cheese on each slice, ensuring they are evenly topped. Bake in the oven for 5 to 7 minutes, or until the brie has melted and become soft and gooey.
  3. Assemble the Crostini: Once the brie-topped baguette slices come out of the oven, spoon a generous amount of the roasted grapes on top of each melted cheese slice. Drizzle each crostini with honey to add sweetness and depth of flavor. Sprinkle chopped toasted walnuts over the top for crunch, followed by a light sprinkle of Maldon sea salt to enhance the flavors. Finally, garnish with fresh diced rosemary to add a fragrant herbal note. Serve immediately, making approximately 20-24 crostini.

Notes

  • Use seedless red grapes for easy roasting and eating.
  • To toast walnuts, place them in a dry skillet over medium heat for 3-5 minutes, stirring frequently until fragrant and lightly browned.
  • Adjust the amount of honey based on your preferred sweetness level.
  • Maldon sea salt flakes add a pleasant crunch and burst of saltiness—regular sea salt can be substituted but use sparingly.
  • Baguette slices can be prepared ahead and toasted just before assembling to save time.
  • Fresh rosemary can be swapped with thyme for a different herbal accent.
