Instructions

  1. Prepare the Egg Mixture: Crack 7 small eggs into a medium mixing bowl and add 1 tablespoon of whole milk. Whisk the mixture until the egg yolks are just blended, creating a smooth egg base for cooking.
  2. Heat the Skillet and Prepare Molds: Place a 10-inch non-stick skillet over medium heat, maintaining a temperature around 250 degrees Fahrenheit. Position 3 circular rings or crumpet molds in the skillet; you may spray the inside of the rings with cooking spray for easier release, though it’s optional.
  3. Add Egg Mixture and Fillings: Ladle approximately 2 spoonfuls of the egg mixture into each ring, filling them about halfway. Then, evenly distribute 1/2 cup of shredded mozzarella and about 3 to 4 slices of turkey pepperoni across the three molds. Cook uncovered for 3 minutes.
