  • 4 skinless chicken breasts
  • 1 tsp ground cumin
  • 1 tbsp olive oil
  • 1 onion, finely sliced

Sauce and Vegetables

  • 400g can cherry tomatoes
  • 2 tbsp harissa paste (we used Belazu Rose Harissa)
  • 1 tbsp clear honey
  • 2 medium courgettes, thickly sliced
  • 400g can chickpeas, drained and rinsed

Instructions

  1. Season the chicken: Season the chicken breasts all over with 1 teaspoon of ground cumin and plenty of freshly ground black pepper to enhance the flavor.
  2. Sauté chicken and onions: Heat 1 tablespoon of olive oil in a large non-stick frying pan over medium heat. Add the seasoned chicken and the finely sliced onion, cooking for 4 minutes. Turn the chicken over and cook for an additional 3 minutes, stirring the onions around the chicken regularly to prevent burning and ensure even cooking.
  3. Add tomatoes and liquids: Pour the canned cherry tomatoes and 250ml of water into the pan. Stir well to combine ingredients.
  4. Incorporate harissa and honey: Mix in 2 tablespoons of harissa paste and 1 tablespoon of clear honey. These add a sweet-spicy depth to the sauce.
  5. Add vegetables and chickpeas: Add the thickly sliced courgettes and drained rinsed chickpeas to the pan and stir to distribute evenly throughout the sauce.
  6. Simmer to finish: Bring the mixture to a gentle simmer. Cook uncovered for about 15 minutes, or until the chicken is tender and fully cooked, and the sauce has thickened slightly. Stir occasionally to prevent sticking and ensure even cooking.

  • Adjust the amount of harissa paste according to your preferred spice level.
  • Use skinless chicken thighs instead of breasts for a juicier result.
  • Serve with couscous or crusty bread to soak up the delicious sauce.
