Cookies:
- 2 1/4 cups rolled oats (not quick oats)
- 1 3/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger (optional)
- 1 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/3 cup packed light brown sugar
- 2 Tbsp molasses
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
Cream Filling:
- 8 Tbsp unsalted butter, at room temperature
- 2 oz. cream cheese, near room temperature
- 2 1/4 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- For the Cookies Preheat oven to 350 degrees. Line baking sheets with parchment paper. In a mixing bowl, whisk together oats, flour, baking soda, salt, cinnamon, nutmeg, and ginger. In a separate bowl, cream together butter, granulated sugar, and brown sugar. Add molasses, eggs, and vanilla. Mix in the dry ingredients. Scoop dough onto baking sheets and bake until slightly under-baked. Let cool.
- For the Cream Filling Cream together butter and cream cheese. Add powdered sugar and vanilla extract. Whip until light and fluffy. Spread or pipe filling between cookie sandwiches. Store in the fridge.

- For a richer flavor, toast the oats in a dry skillet over medium heat until fragrant before using.
