Ingredients
Scale
Main Ingredients
- 100g ramen noodles
- 100g green beans, halved
- 250g turkey mince
- 2 garlic cloves, chopped
- 6 spring onions, sliced diagonally
Sauce
- 3 tbsp hoisin sauce
- juice of 1 lime
- 1 tbsp chilli sauce
- 1 tbsp vegetable oil
Instructions
- Cook noodles and green beans: Boil the ramen noodles according to the package instructions, adding the halved green beans during the last 2 minutes of cooking to blanch them slightly. Drain both and set them aside.
- Prepare the sauce: In a small bowl, whisk together the hoisin sauce, lime juice, and chili sauce until combined. This mixture will give the dish its signature sweet, tangy, and spicy flavor.
- Cook the turkey: Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the turkey mince and fry until it is nicely browned and cooked through, breaking it up as it cooks.
- Add garlic and saucing: Add the chopped garlic to the pan and fry for an additional minute until fragrant. Then pour in the prepared hoisin sauce mixture and stir well, cooking for a few more minutes until the sauce becomes sticky and coats the meat evenly.
- Toss together noodles and vegetables: Add the drained noodles, green beans, and half of the sliced spring onions to the wok. Toss everything thoroughly and cook for another 2-3 minutes, allowing the flavors to meld and the ingredients to heat through.
- Serve: Transfer the noodles and turkey to serving plates or bowls. Scatter the remaining spring onions on top as a fresh garnish and serve immediately.
Notes
- Use ramen noodles for their quick cooking and texture, but any thin wheat noodles can be substituted.
- Adjust the amount of chili sauce to your preferred spice level.
- Fresh lime juice adds brightness to the dish; avoid bottled for best flavor.
- If turkey mince is unavailable, lean chicken mince can be used instead.
- This dish is best enjoyed immediately but can be refrigerated and gently reheated the next day.
