  • juice of 1 lime
  • 1 tbsp chilli sauce
  • 1 tbsp vegetable oil

Instructions

  1. Cook noodles and green beans: Boil the ramen noodles according to the package instructions, adding the halved green beans during the last 2 minutes of cooking to blanch them slightly. Drain both and set them aside.
  2. Prepare the sauce: In a small bowl, whisk together the hoisin sauce, lime juice, and chili sauce until combined. This mixture will give the dish its signature sweet, tangy, and spicy flavor.
  3. Cook the turkey: Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the turkey mince and fry until it is nicely browned and cooked through, breaking it up as it cooks.
  4. Add garlic and saucing: Add the chopped garlic to the pan and fry for an additional minute until fragrant. Then pour in the prepared hoisin sauce mixture and stir well, cooking for a few more minutes until the sauce becomes sticky and coats the meat evenly.
  5. Toss together noodles and vegetables: Add the drained noodles, green beans, and half of the sliced spring onions to the wok. Toss everything thoroughly and cook for another 2-3 minutes, allowing the flavors to meld and the ingredients to heat through.
  6. Serve: Transfer the noodles and turkey to serving plates or bowls. Scatter the remaining spring onions on top as a fresh garnish and serve immediately.

  • Use ramen noodles for their quick cooking and texture, but any thin wheat noodles can be substituted.
