Ingredients
Scale
Cookie Dough
- 1 cup peanut butter
- 3 Tbsp. butter, softened
- 1 and ¼ cups powdered sugar
- 1 cup honey nut granola, big clumps broken up
Filling
- ¼ cup raspberry jam, or other red jam of your choice
Instructions
- Cream the butter and peanut butter: In a stand mixer fitted with a paddle attachment, cream together the peanut butter and softened butter until smooth and well combined.
- Mix in sugar and granola: Stir in the powdered sugar and broken-up granola pieces to form a soft, pliable dough that holds together but is not too sticky.
- Shape the cookies: Roll the dough into 24 evenly sized balls and place them in a single layer on a parchment-lined tray. Use your thumb or the back of a greased spoon to gently press a small indentation in the center of each cookie ball.
- Add the jam filling: Spoon a small amount of raspberry jam into each indentation, filling the thumbprint for a sweet and colorful topping.
- Chill to set: Place the tray in the refrigerator and chill the cookies for at least 1 hour, or until firm. Store the finished cookies in the refrigerator to keep their shape and freshness.
Notes
- Use any type of red jam such as strawberry or cherry if you prefer.
- Make sure the granola is in big clumps for added texture.
- These cookies must be stored in the refrigerator and are best eaten within 3-5 days.
- For a nut-free option, substitute peanut butter with sunflower seed butter and choose a granola without nuts.
- Press the indentation gently to avoid flattening the cookie completely.
