Instructions

  1. Heat Cream: Pour the heavy cream into a bowl and microwave in 30 second increments, stirring between each interval, until the cream is nearly boiling (around 200°F).
  2. Make Ganache: Add the chocolate chips to the hot cream and stir until the mixture is completely smooth and the chocolate is melted. Place the ganache in the fridge to chill for 15 minutes until slightly firm.
  3. Prepare Molds: Using the tempered chocolate and a paintbrush, spoon some chocolate into the candy molds and paint the sides thoroughly to create the chocolate shell. Chill the molds until the chocolate is set.
  4. Fill Molds: Transfer the chilled ganache into a piping bag or a ziplock bag with the tip cut off. Pipe a dot of ganache into the center of each chocolate shell in the molds, tapping gently to remove air bubbles. Return the molds to the fridge for 10 minutes to set the ganache.
  5. Seal Truffles: Spoon the remaining tempered chocolate over the molds, using a spatula to scrape off excess and create a smooth bottom layer. Place the molds back in the fridge for 15 minutes to fully harden all layers.
