- Boil the potatoes and broccoli: Place 500g of new potatoes in a large pan with water and bring to a boil. After about 8 minutes, add the broccoli florets to the boiling water and cook both together for a total of 10-12 minutes until tender. Drain well using a colander.
- Cook the salmon: While the vegetables are boiling, arrange the salmon fillets in a microwave-safe dish, add a splash of water to keep them moist, cover with cling film, and microwave on High for 2½ minutes until the salmon flakes easily with a fork.
- Brown the potatoes: Heat 1 tablespoon of olive oil in a deep frying pan over a high heat. Slice the boiled potatoes into chunky pieces and add them to the pan. Cook for a few minutes, turning occasionally, until the potatoes develop golden edges.
- Combine ingredients in the pan: Flake the cooked salmon into large chunks and nestle them among the potatoes in the pan. Add the cooked broccoli florets as well.
- Add the egg mixture: Stir the finely chopped mint and seasoning of your choice into the beaten eggs. Pour the egg mixture evenly over the salmon, potatoes, and broccoli in the pan. Reduce the heat to low and cook for about 6 minutes until the sides are set but the center is still slightly wobbly.
- Finish under the grill: Preheat the grill. Place the frying pan under the grill to set the center of the frittata completely and brown the top. This final step creates a nicely browned, firm frittata ready to serve.
- Serve: Cut the frittata into wedges and serve warm with a big green salad on the side for a balanced meal.
