Delicious and kid-friendly Mini Meatloaf Muffins topped with creamy mashed potato frosting. Perfectly portioned and packed with savory flavors, these meatloaf muffins are easy to make and great for a comforting dinner or lunch.

Ingredients

Scale

Meatloaf Muffins

  • 1 pound ground beef (or turkey)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 tablespoons ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Mashed Potato Frosting

  • 2 large potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Grease the muffin tin using non-stick spray or olive oil to ensure the meatloaf muffins don’t stick.
  2. Mix meatloaf ingredients: In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Fill muffin tin: Spoon the meat mixture into the prepared muffin tin, filling each cup about 3/4 full to allow space for expansion during baking.
  4. Bake meatloaf muffins: Place the muffin tin in the oven and bake for 20-25 minutes until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
  5. Prepare mashed potatoes: While muffins bake, boil the cubed potatoes in salted water for about 15 minutes or until tender. Drain, then return potatoes to the pot.
  6. Mash potatoes: Add butter and milk to the drained potatoes and mash with a fork or potato masher until smooth and creamy. Season with salt and pepper to taste.
  7. Cool muffins and transfer: Remove meatloaf muffins from oven once cooked. Let them cool for a few minutes, then transfer the muffins from the tin to a baking sheet for easy frosting.
  8. Frost with mashed potatoes: Using a piping bag or spoon, pipe or spread the mashed potatoes on top of each mini meatloaf muffin to create a decorative frosting effect.
  9. Serve and enjoy: Serve the Mini Meatloaf Muffins warm as a comforting meal perfect for family dinners or packed lunches.
