Ingredients
Scale
Meatloaf Muffins
- 1 pound ground beef (or turkey)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 small onion, finely chopped
- 1 egg
- 2 tablespoons ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Mashed Potato Frosting
- 2 large potatoes, peeled and cubed
- 1/4 cup butter
- 1/4 cup milk
- Salt and pepper to taste
Instructions
- Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Grease the muffin tin using non-stick spray or olive oil to ensure the meatloaf muffins don’t stick.
- Mix meatloaf ingredients: In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Fill muffin tin: Spoon the meat mixture into the prepared muffin tin, filling each cup about 3/4 full to allow space for expansion during baking.
- Bake meatloaf muffins: Place the muffin tin in the oven and bake for 20-25 minutes until the meatloaf is cooked through and reaches an internal temperature of 160°F (70°C).
- Prepare mashed potatoes: While muffins bake, boil the cubed potatoes in salted water for about 15 minutes or until tender. Drain, then return potatoes to the pot.
- Mash potatoes: Add butter and milk to the drained potatoes and mash with a fork or potato masher until smooth and creamy. Season with salt and pepper to taste.
- Cool muffins and transfer: Remove meatloaf muffins from oven once cooked. Let them cool for a few minutes, then transfer the muffins from the tin to a baking sheet for easy frosting.
- Frost with mashed potatoes: Using a piping bag or spoon, pipe or spread the mashed potatoes on top of each mini meatloaf muffin to create a decorative frosting effect.
- Serve and enjoy: Serve the Mini Meatloaf Muffins warm as a comforting meal perfect for family dinners or packed lunches.
