For the Salad:

  • 5 medium ears fresh corn (shucked)
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons diced red onion
  • 3 tablespoons fresh cilantro (minced)
  • 45 small radishes (cut into thin slices and then cut in half)
  • 1 small ripe avocado (sliced)
  • ¼ cup crumbled cotija cheese

For the Dressing:

  • ½ cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chipotle sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon chili powder

Instructions

  1. Preheat a grill or grill pan. Melt the butter and brush onto each ear of corn.
  2. Season corn with salt and pepper. Grill for 10-15 minutes until charred.
  3. Prepare the dressing. Mix mayonnaise, lime juice, chipotle sauce, paprika, and chili powder in a bowl.
  4. Remove corn kernels. Add to a large bowl with onion, cilantro, radish, avocado, and cotija cheese.
  5. Add dressing. Toss to coat and adjust seasoning to taste.
