- 1 tbsp olive oil
- 250g lean lamb fillet, trimmed of any fat and thinly sliced
- 140g shallots, halved
- 2 large courgettes, cut into chunks
- 1 red pepper, cut into chunks
- 1 orange pepper, cut into chunks
- 1 green pepper, cut into chunks
- 1 garlic clove, sliced
- 150ml vegetable stock
- 250g cherry tomatoes
- Handful coriander leaves, roughly chopped
- ½ tsp ground cumin
- ½ tsp paprika
- ½ tsp ground coriander
Instructions
- Heat the oil and cook lamb and shallots: Heat 1 tablespoon of olive oil in a large, heavy-based frying pan over high heat. Add 250g of thinly sliced lean lamb fillet and 140g halved shallots. Cook for 2-3 minutes until the lamb is golden on the outside.
- Add courgettes and stir-fry: Add 2 large courgettes cut into chunks to the pan and stir-fry for 3-4 minutes until they begin to soften, stirring frequently to ensure even cooking.
- Incorporate spices and peppers: Sprinkle ½ teaspoon each of ground cumin, paprika, and ground coriander over the lamb and vegetables, tossing well to combine. Then add the red, orange, and green peppers (each cut into chunks) along with 1 sliced garlic clove.
- Simmer with stock and tomatoes: Reduce heat to moderate. Pour in 150ml vegetable stock and stir to coat all ingredients. Add 250g cherry tomatoes and season with salt and pepper to taste. Cover the pan with a lid and simmer gently for 15 minutes, stirring occasionally until all vegetables are tender and flavors meld.
- Finish with fresh coriander: Just before serving, stir in a handful of roughly chopped fresh coriander leaves to add brightness and freshness to the dish.
