  • 25g cheddar, grated

  1. Step 1: In a bowl, combine the turkey mince, dried oregano, fennel seeds, and a pinch of salt and pepper. Shape walnut-sized pieces of the mixture into meatballs.
  2. Step 2: Heat half of the olive oil in a large, shallow ovenproof pan over medium heat. Cook the meatballs until browned on all sides but not fully cooked through, then transfer them to a plate.
  3. Step 3: Preheat your oven to 200°C (180°C fan)/gas mark 6.
  4. Step 4: In the same pan, add the remaining oil and cook the chopped onion over medium heat until softened, about 10-12 minutes, stirring regularly.
  5. Step 5: Add the crushed garlic and cook for another minute. Stir in the tomato purée, chopped tomatoes, and sugar, then let the sauce simmer gently for 10-15 minutes. Season to taste with salt and pepper.
