Ingredients
Scale
Chipotle Aioli
- ½ cup mayonnaise, homemade or store bought
- 3–6 dashes chipotle hot sauce
- 1 splash fresh lime juice (about half a lime)
- ¼ teaspoon coarse kosher salt or sea salt
- ¼ teaspoon cracked black pepper
Lobster Filling
- ½ pound cooked lump lobster meat
- 1 teaspoon unsalted butter
- ¼ cup red onion, diced
- ½ teaspoon garlic, minced
- ½ teaspoon cumin
- ¼ teaspoon cayenne pepper or chili powder
- 1 pinch salt
- 1 pinch black pepper
Other
- 8 corn or flour tortillas
- 2 tablespoons olive oil (for frying tortillas, optional)
Instructions
- Prepare the chipotle aioli: In a small bowl, combine the mayonnaise and chipotle hot sauce. Squeeze in fresh lime juice from half a lime, then add salt and cracked black pepper. Mix everything thoroughly until smooth. Chill the aioli in the refrigerator to allow the flavors to meld, ideally for at least 15 minutes or up to a day ahead.
- Cook the lobster filling: Heat butter or olive oil in a small sauté pan over medium heat. Add diced red onions and sauté for about 2 minutes until softened and fragrant. Add the minced garlic and cook for an additional 30 seconds until fragrant. Stir in the cooked lobster meat along with cumin, cayenne pepper or chili powder, a pinch of salt, and black pepper. Gently stir the mixture frequently just to heat through without overcooking. Remove from heat immediately once heated.
- Heat the tortillas: Warm your choice of corn or flour tortillas using your preferred method—microwave, oven, directly over a gas stove flame for a slightly charred taste, or lightly fried in olive oil for crispiness.
- Assemble the tacos: Place a few tablespoons of the lobster filling onto each warmed tortilla. Drizzle generously with the chipotle aioli and add any favorite taco toppings such as shredded lettuce, diced tomatoes, or cilantro if desired. Serve immediately and enjoy the vibrant flavors.
Notes
- The chipotle aioli can be made a day in advance and stored in the refrigerator for enhanced flavor.
- Use freshly cooked lobster or high-quality store-bought cooked lobster meat for best results.
- For a spicier taco, increase the amount of chipotle hot sauce or cayenne pepper to taste.
- If you prefer a gluten-free option, stick to corn tortillas instead of flour tortillas.
- Optional toppings like avocado slices, shredded cheese, or fresh cilantro complement the flavors well.
- To keep the lobster tender, avoid overcooking when reheating in the sauté pan.
