Ingredients
Scale
Avocado Mixture
- 2 Avocados
- 1/4 Lemon (juiced)
- Fine Salt to taste
Toast
- 4 slices Baguette
Toppings
- 4 ounces Lobster meat, chopped
- 1 Jalapeño Pepper, sliced or chopped
- 2 teaspoons Fresh Chives, chopped
- Extra-Virgin Olive Oil to taste
Instructions
- Prepare the Avocado: Slice the avocados in half lengthwise, remove the pits, and scoop the flesh into a bowl. Add the juice of 1/4 lemon and a good pinch of fine salt to taste, then mash with a fork until relatively smooth. Set aside briefly.
- Preheat Broiler and Toast Bread: Preheat your oven broiler on high. Slice the baguette into 4 slices if not already sliced. Arrange the slices on a baking sheet and broil for 1-2 minutes per side until they become golden and toasty.
- Prepare Lobster: Chop the cooked lobster meat into small bite-sized pieces.
- Assemble the Toasts: Spread a thick layer of the mashed avocado onto each toasted baguette slice. Top each with the chopped lobster meat. Sprinkle with finely chopped jalapeño and fresh chives evenly.
- Finishing Touch: Drizzle each toast with extra-virgin olive oil to enhance flavor and richness.
- Serve and Enjoy: Serve immediately to enjoy the contrast of creamy avocado, fresh lobster, and crunchy toast.
Notes
- Use ripe avocados for the creamiest texture.
- If you prefer less spice, reduce or omit the jalapeño.
- Cooked lobster can be substituted with crab or shrimp if desired.
- Be careful while broiling; bread can burn quickly under high heat.
- Fresh chives add a nice mild onion flavor; substitute with green onions if unavailable.
