Ingredients
Scale
Sweet Potato Wedges
- 8 small sweet potatoes or 4 large (washed and dried)
- 1 tsp olive oil
- 1 tsp sea salt
- 4 tbsp unsalted butter
Creamy Yogurt Sauce
- 4 tbsp Greek yogurt or sour cream
- ½ lemon (juiced)
- ¼ tsp smoked paprika
- ¼ tsp sea salt or salt to taste
- 1 tbsp dried or fresh green onions (finely chopped if fresh)
Toppings
- Lena’s Kitchen Pickled Onions
- Fresh radishes (thinly sliced)
- Fresh herbs (finely chopped)
Instructions
- Prepare the Creamy Yogurt Sauce: In a small bowl, combine the Greek yogurt or sour cream, lemon juice, smoked paprika, sea salt, and finely chopped green onions. Mix thoroughly until smooth and set aside to allow the flavors to meld.
- Prepare the Sweet Potatoes: Wash and dry the sweet potatoes carefully. Rub them evenly with olive oil using your hands, then sprinkle with sea salt to season the skins.
- Air Fry the Sweet Potatoes: Place the sweet potatoes in the air fryer basket, ensuring they are spaced out and not touching. Set the air fryer temperature to 400°F and cook for 12-15 minutes for small sweet potatoes, or 30-45 minutes for medium to large ones, until they are tender when pierced with a fork.
- Finish the Sweet Potatoes: Remove the cooked sweet potatoes and let them rest for 5 minutes. Slice each sweet potato open and add about a tablespoon of unsalted butter inside while still warm, allowing it to melt.
- Assemble and Serve: Top each sweet potato with a generous dollop of the creamy yogurt sauce. Garnish with thinly sliced fresh radishes, Lena’s Kitchen pickled onions, and finely chopped fresh herbs. Serve immediately and enjoy!
Notes
- For a tangier flavor, use sour cream instead of Greek yogurt in the sauce.
- Adjust the smoked paprika and salt to taste depending on your preference.
- You can substitute fresh green onions with dried ones if unavailable.
- Make sure not to overcrowd the air fryer basket to ensure even cooking.
- Leftover sweet potatoes can be reheated in the air fryer for a few minutes to regain crispiness.
