For the Burgers
- 500g Morrisons Market Street 15% fat beef mince
- 1 tbsp all-purpose seasoning (such as Dunn’s River)
- 6–8 cheese slices, chopped
- 2 large pickles, finely chopped
For Serving
- 4 brioche burger buns
- 3 tbsp vegetable oil
- 1 large tomato, sliced
- Lettuce leaves
- Ketchup
- Mayonnaise
- French fries
Instructions
- Prepare the Beef Mixture: Place the beef mince and all-purpose seasoning in a large bowl. Season with salt and pepper, then mix thoroughly with your hands to combine all the flavors evenly.
- Shape the Patties: Divide the mixture into 8 portions, forming 4 large, very flat patties and 4 slightly smaller patties to serve as burger tops.
- Stuff the Burgers: Take a large patty and place a generous amount of chopped cheese and pickles in the center. Top with a smaller patty, then carefully fold the edges of the larger patty around the smaller one, sealing the filling inside completely to form a stuffed burger. Repeat this process for all burgers.
- Toast the Buns: Heat a large frying pan over medium heat. Place the brioche buns cut side down in the dry pan and toast for 2-3 minutes until golden brown. Remove and set aside.
- Fry the Burgers: Add half the vegetable oil to the same pan and heat until shimmering. Fry two stuffed patties at a time for 3-4 minutes on each side over medium heat, pressing down gently to ensure even cooking and a crispy crust. The burgers should reach medium doneness with melted cheese inside. Repeat with remaining oil and patties.
- Rest the Burgers: Remove the patties from the pan and let them rest for 5 minutes. This helps settle the juices and ensures the cheese inside is not dangerously hot.
- Assemble and Serve: Fill the toasted brioche buns with the rested patties, tomato slices, lettuce leaves, ketchup, and mayonnaise. Serve immediately with French fries on the side for a full meal.
