  • 500g Morrisons Market Street 15% fat beef mince
  • 1 tbsp all-purpose seasoning (we used Dunn’s River)
  • 6-8 cheese slices, chopped
  • 2 large pickles, finely chopped
  • 4 brioche burger buns
  • 3 tbsp vegetable oil
  • 1 large tomato, sliced
  • Lettuce leaves
  • Ketchup and mayo, to serve
  • French fries, to serve

Instructions

  1. Step 1: In a large bowl, combine the beef mince and all-purpose seasoning. Season with salt and pepper, then mix thoroughly with your hands. Shape the mixture into 4 large, very flat patties and 4 slightly smaller patties.
  2. Step 2: Place a larger patty on your work surface. Add some chopped cheese and pickle in the center. Place a smaller patty directly on top, then carefully fold the edges of the larger patty around the smaller one, sealing the filling inside. Repeat to make 4 stuffed burgers.
  3. Step 3: Heat a large frying pan over medium heat. Toast the cut sides of the brioche buns for 2-3 minutes until golden, then set aside.
  4. Step 4: Add half the vegetable oil to the pan. When shimmering, fry two stuffed patties at a time for about 3-4 minutes per side, pressing down gently as they cook. Aim for a medium finish with a nice crust and melted cheese inside. Repeat with the remaining oil and patties.
  5. Step 5: Let the burgers rest for 5 minutes to allow the cheese to settle and avoid burns.
  6. Step 6: Assemble the burgers by filling brioche buns with the patties, tomato slices, lettuce, ketchup, and mayo. Serve with French fries on the side.
